Oreo Cake

Many know I love being in the kitchen and the kitchen is the most relaxing place for me to spend my free time.  I have made many a meals and spend countless hours cooking, but when it comes to baking, I usually don’t have the patients to do much of it.  When they say it really is a science, they mean it!

However, when it comes to special occasions and special people.  I’lI drink an extra stiff drink   and ake a little extra time to do a little baking.  Thus I searched all over for the perfect dessert for my family

I knew I wanted something with a little chocolate, and also kept in mind the family loves cookies.  Thus I found this Oreo Cake recipe from Brown Eyed Baker. However, I omitted the Chocolate gnash because I figured the cake itself would be super rich already with out it.

I was a bit nervous going into it, I have NEVER made a cake from scratch, all Duncan Hines and Betty Crocker for me,  but figured I would try and if it didn’t work out I would turn it into a tri-fold dessert,

So I went to town and gathered everything I needed

So I mixed, added, beat, whisked, cussed, and prayed like heck the cakes would turn out.  I separated the batter between two 9” cake pans put them in the oven and cleaned up my mess.

And to my surprise the cakes rose and turned out perfect!

*I baked and left them cool over night in the pans.  Note to all those who bake as much as I do….Take the cakes OUT of the pans after ten minutes off cooling to allow for the cake to slide right out.  I did not.  Thus when I went to take them out they were stuck and it took A LOT of patients, mommas magic cooking touch, and a lot of praying for them to finally get them to come out in one piece.

I next set out to make the “Crème” filling

I mixed the block of crème cheese, sugar and chopped cookies and got the cakes ready

Perfect amount and perfect frosting technique.  No tearing or cake in the frosting.

I then I added a few more chopped cookies to the top and set it outside in the freezing garage to set over night

It turned out PERFECT.  Wow.

The cake was soo moist and not overly chocolaty. (Mom and I ate all the crumbs that stuck to the bottom of the pan and what fell off the side of the cake.)  As the recipe below notes, the batter is super thin, and I was a bit worried it was going to turn out as two big pans of chocolate pudding.

And the crème filling was a little tangy from the crème cheese, but sweet from the sugar and the cookies.  So solid and on point.  I wish I would have seen the oreo cookies with different filling for Christmas, Halloween, ect, but was in a hurry and just grabbed the regular.

This cake could be used with ALL the holiday themed Oreo Cookies to make it even more festive.

Everyone loved it.  But since it was a two tired cake, it was pretty rich so there was like half left over.  However, lucky I am family with fellow sweet tooth’s and the rest found a home at my aunt and uncles house Winking smile

I’m not sure if I every want to eat a box cake again and in all honesty it was not a daunting task as I thought it would be.

Cookies & Cream Oreo Look-Alike Cake

Yield: 12 servings

For the Cake (Hershey’s Perfectly Chocolate Cake)
2 cups sugar
1¾ cups all-purpose flour
¾ cup cocoa powder
1½ teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

For the Filling:
8 ounces cream cheese, at room temperature
½ cup sugar
1 cup (8 ounces) heavy whipping cream
12 Oreo cookies, coarsely chopped

1. To make the cake, preheat the oven to 350°F. Grease and flour two 9-inch round baking pans.

2. Stir together the sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl. Add eggs, milk, oil and vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Divide the batter evenly between the two pans.

3. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

4. To make the filling, with a stand or hand mixer fitted with a whisk attachment, whisk the heavy whipping cream on low until it starts to become frothy and thick. Gradually increase the speed and whisk until stiff peaks form. Set aside.

5. In a large bowl beat together the cream cheese and sugar until well-blended and smooth. Using a rubber spatula, gently fold in ¼ of the whipped cream to lighten the cream cheese mixture. Fold in the remaining whipped cream, and then the chopped Oreos.

6. Place one layer of the cake on a serving plate, spread the filling mixture on top, and top with the second cake layer.

7.  Let chill for atleast an hour for the filling to set!

Again the cake was so good and I will for sure make this again.  So if you are not a baker and are scared or don’t have the patients to bake, I highly recommend to atleast give it a shot, you may just surprise yourself.  And what the worst that can happen if you try to make this cake?  You end up with some amazing Chocolate Pudding and a heck of a Oreo crème filling to eat Winking smile

Super Bowl XLVI

Pride, Hard Work, and Dedication are the first words that come to mind when I think of the effort and execution in which Indianapolis and the Super Bowl Host Committee put forth last week.  Living downtown, in the heart of  the Super Bowl, we may have experienced first hand, one of the most well run parties the NFL has witnessed.   I knew the city would put on a good show, being that they seamlessly host the Big Ten Basketball Tournament for football and basketball, NCAA tournaments, and many other large events and conventions held throughout the year.  However, I had no idea it would be on this level.  The city began to prepare for the Super Bowl over four years ago when it was announced by the Super Bowl Host Committee Indy had won the bid, thus the last few days,  the city has a bit of hangover from the hype and festivities.  Moreover, as I look back on the week that was, is how well the city rallied behind each over to make this event one of the best.  Yes, perhaps we were spoiled by some amazing weather, and there were no major incidents to ruin the buzz of the week.  It should be noted the way this city and its residents handled the whole week, and it is a testament to what Indianapolis can really do when we put all our energy and resources together.

Numerals, Zipline, and Super Bowl Village

I feel the reality of the event set in for most residents, when these Numerals were put up down on the circle two weeks the Super Bowl.

The Roman Numerals on the South side of the circle at the heart of it all, stood 30-feet high and 82-feet wide, and weighs 96-ton, was for sure one of the biggest attractions.

However, the numerals were not to be outdone by perhaps the hottest Super Bowl attraction, the Zipline, which spanned Capitol street, and there is already talk of having it back for the Indy 500 Race at the end of May.  10,429 people flew down the zipline in Super Bowl Village, and at only 10 dollars a pop, it was a no brainer to hear that some families just came downtown JUST for the zipline.  The last weekend of the Super Bowl, people were lining up at 10PM the night before to try and get tickets and a spot in line.  The local news even found two girls who were standing in line and sold their tickets for $250.00 each to someone whom could not get a ticket.

This was the sign at the end of zip line in front of St. John Catholic Church, where Fr. Rick Nagel did a great job of opening his doors to all the downtown visitors. 

Another success was the Super Bowl Village, which stretched down Georgia Street.  From Capital Street, where the Zipline was set up, all the way down to Bankers Life Field House where the Indiana Pacers play.

Some highlights of the Village, were Ice Carvings from the folks at the Food Network, Food Vendors, Free Live Music on three different stages, where the free Pepsi Stage getting most of the attention.  Whom had acts such as Brett Michaels, Darius Rucker, LMFAO along with a list of many many more,

However, the music stages were a chance for the community to really get into the local music scene, and take in many local music acts that included, Acoustic Empire, whom had some Indianapolis royalty show up for their Show.

Super Bowl Village really turned into a week long party.

As you can see, it got a bit crazy down there, but I am so glad I had the chance to experience the whole thing.

Along with Super Bowl Village, inside the Convention Center the NFL Experience was held, and ESPN Studios were set up down on the Pan Am Plaza, where they did live shows, Sport Center, and turned into the mecca for all sports fans.

While it was nice to all the national media highlight the events I mentioned above, I want to get back to why the city really benefited from the Super Bowl.  There were so many events that were “off the beaten path” such as Taste of the NFL, where local Chef Gregg Hardisty, whom owns and run the hip new trendy restaurants Recess and Room Four, displayed his talent

Souper Bowl

Another great event was the “Souper” Bowl Competition.  Where 8 of Indy’s top chef’s competed in a a soup competition, where all the proceeds were donated to Second Helpings, whom turn around and used prepared and perishable food, re-prepare it into nutritious meals, and distribute those meals to over 60 social services organizations that feed hungry people.  Second Helpings had recovered 40,000 pounds of food from Super Bowl-related events!

This Bowl was given to the Top Chef of the competition, and this year Ms. Kathy  Jones, head chef at Iozzo’s Garden of Downtown Indy.

Also a few other highlights were a Bob&Tom and a Signed Larry Bird Bowl. 

City Market

It was such a great event and with great Chefs like Roger Hawkins from Circle City Soups located in the newly rejuvenated downtown City Market, helped give some press and drew some interest for the visitors into The Market.  With great vendors such as:

It was a great week had by all in the city, but if you take one thing from my ramblings, it is that I hope you appreciate and remember all the local delivery men and woman, the bus boys and girls, the servers, the chefs, the street sweepers, and the 13,000 volunteers whom really held this city together throughout the week of madness, and put in many sleepless nights, hours logged, and worked their tails off to make this city shine on a national stage.   Thus, if you were someone in the background who did you job, which will probably never go noticed.  Lift a glass this evening and here’s a big cheers to you, we could have not done it with out all of you, well done and thank you.

And Guy Fieri hung out with Erin Edds whom owns Hoosier Bloody Mary Maker, said close 18,400 Hoosier Momma Bloody Mary’s were consumed during the week in the Indianapolis area.  Yet again another amazing Indiana Business who rocked it out during the week that was. 

All and all it was a great week and a heck of a Super Bowl Game itself.  Yes, the New York Giants won the game, and big ups to them and the city of New York.  However, I would say the real winner last weekend was the City of Indianapolis and all of its local businesses and blue collar men and woman who made this show go off without a hitch.  Thanks to all the fans of both the New England Patriots and NY Giants for visiting our city and giving us nothing but praise.  I met many from both places and was nothing but impressed with each and every visitor I met. Nice work Indianapolis, and here’s to getting a bid for another Super Bowl in 4 years.

Valentine’s Day White Chocolate Peanut Butter Cookies

Yesterday I had the day off from work, from my job in the restaurant, so I though what better way to spend the day then to be in my own kitchen!

Britt jokingly mentioned this weekend that her co-workers asked I was going to bring them in food one day, so I decided that I would surprise them and make their day today.  I saw a bag of Valentine’s M&M’s this weekend and wanted to get everyone in the spirit of the Holiday and knew I would incorporate them into a cookie.

I knew I wanted the cookie to be “normal” cookie, while including chocolate and peanut butter (is there any better mates in life)

However, I take my Peanut Butter pretty serious and if you have yet to get into quality Peanut Butter I highly recommend looking up Peanut Butter and Co..  They are a New York based company but started out as a small shop in the city and have now grown into a Peanut Butter super power Winking smile

With 6 different peanut butters, I delayed trying them out because I have had “flavored” peanut butters in the past and they were not even worth opening the jar. This offering from Peanut Butter & Co is certainly worth opening the jar for. For an adult “gourmet” PB & J’s, try the White Chocolate Wonderful with  There is also a a cinnamon raisin flavor that is outstanding with apples or bananas. The price is higher than JIF or Skippy, but this peanut butter isn’t meant for spreading on celery sticks. I use the cinnamon raisin for outrageous cookies. They also offer varieties with honey, spicy (the BEST for Thai food), dark chocolate (amazing cookies & bars), maple (pancakes never had it so good), as well as plain and chunky peanut butter (for purists). Their website also offers jams/jellies, baking mixes, gear like bags and shirts, and the quintessential peanut butter partner – marshmallow fluff. If you have never had a fluffer-nutter, you are missing out on one of life’s guiltiest pleasures. And for a health “nut” like myself, the best part there is no additives or fillers in the nut butters.  They try to keep it all local and as healthy as possible.

Back to the cookies, I wanted to make a cookie that was balanced between sweet, and also a bit healthier, while keeping a ton of flavor.  Thus, I looked at my options in the cabinets and choose to start the base of the cookie with this one out of my nut butter stash

This may or may not be the best peanut butter I have ever eaten.  Again, this peanut butter is not your typical peanut butter and is far from the bland nut butters you ate as a kid.  Its on a level all its own.  The White Chocolate taste really comes though.  You first get the sweet from the chocolate taste, but its balanced very well by the saltiness from the peanuts.

I then knew I wanted to bump up the nutritional value of the cookies and choose to use half oats and half flour to make myself feel a little better about the amount of cookie dough I would end up eating while the cookies baked.  And this is the final group of items I needed to make perhaps one of the best cookies ever.

Oatmeal White Chocolate Peanut Butter M&M Cookies
*Preheat oven to 350F
1 cup flour
1 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) butter, softened
1/2 Cup peanut butter (I used White Chocolate PB)
1/2 cup sugar
1/3 cup brown sugar
1 tsp vanilla extract
1 egg
1/2 cup oats
1/2 cup Valentine’s m&m’s
1/2 cup of MILK chocolate Chips

Whisk together flour, baking soda and salt. Set aside. In a separate bowl, beat butter, peanut butter, sugars and vanilla until creamy. (This should take 2-3 minutes.) Add the egg and beat to combine. On low speed, gradually add the flour mixture until just combined. Stir in the oats, and then the peanut butter m&m’s. Drop cookie dough onto a baking sheet lined with parchment paper. Your cookies should be large-about 2-3 tablespoons worth of dough.

Bake in a preheated 350 degree oven for 10-12 minutes. They may not look “done” when you take them out of the oven, but the edges should be lightly browned and just set and the cookies will be fluffy in the middle. They will continue to bake on the hot cookie sheet after you remove them from the oven. Let cool nearly completely on the baking sheet before transferring to a wire rack. Store in an air-tight container or re-sealable bag.

They turned out so well, and the addition of the Milk Chocolate chips, along with the peanut butter were perfect.  And the nuttiness from the oats, I feel they had so much flavor than an all flour based cookie.  Now…I will patiently await the finance’s return from work this evening to see if the co-workers thought the same thing.

Whats one food that reminds you of your childhood?

Mine for sure would be peanut butter.  I would eat a PB & J almost once a day, and still lived off that sandwich though college!

Christmas Part I

Hello! I hope everyone had the best Holiday yet.  For our family it was a bit bitter sweet.  This was the first year my sister was not with us for all the festivities.  Currently she is traveling Europe and is Spain, which you can read about her crazy life going continent to continent here.  However, I was lucky enough to get back home to my parents home the Friday before Christmas and had the whole week after Christmas off from work.

As many know, we have a family Christmas tradition of going to an early Christmas Mass on Christmas eve, coming home, having a feast, sitting down after a food coma,  opening a few small gifts, and then opening presents Christmas morning.

Again, it felt a little different than years past so this year we changed it up and after eating and opening some stocking stuffers, which I made my pops snicker doodles and peanut brittle, we headed to a Christmas party with a few friends and family where we got to have a Skype Christmas Eve date with my Sister.  It was nice, but lets just say she had done her fair share of celebrating at the local pubs for the evening.

Christmas morning started with a 6 mile run and these which is usually a staple every Christmas morning

Then we commenced to have another Skype call with Maria while we all opened presents from the Fat Jolly Man.

As you can see we were pretty blessed this year.  And most of my gifts were already unwrapped by Chrismtas morning.  My parents got me a remote Car Starter and also a ipod hookup for my car as well.  I can not thank them enough!

I baked Dad his favorite apple time and also this Hoodie to help become one of the “hip kids”.  Many of you know that My parents own their own Bicycle Shop, and he collects old vintage bikes.  Thus I say this Schwinn Stingray hoodie and figured it would be the perfect first hoodie.

I also got my my some much needed Paula Deen Kitchen Knives, lotion, some Easley Mulled Wine.  Easley is located right down town Indy and make some of the best wine I have tasted.  I hate wine but I can even handle a glass of their Reggae Red and White wine.   Along with the wine I got both my parents each a Trevis Tumbler Glass.

And then got them each one of these for the glasses, sine they both use them as coffee mugs as well.  I will say Trevis Tumblers are perhaps some of the nicest glasses I have used.  They keep your beverage Super cold and also hot liquid hot.  They do not sweat or leave water rings on your table, and are dish water safe! Our cabinet is now full of them.  You can have them customized with writing if you would like and they will soon let customers customize the picture that is on you cup.  They come in various sizes 8,10,12, 16, and 24 oz. and have aton of accessories to go with them including the handles and lids! Perfect gifts for any occasions.

Along with the Mugs Brittni and I got my parents an IU calendar.  Thanks to Britt looking all over Indianapolis for it.  They were sold out everywhere.  After their wins over number the 1 AND 2 ranked teams in the county I guess they were the hot ticket item this year.  On a side note, all the calendar stores had tons of Purdue Calendars Winking smile  Go Hoosiers.

The last gift I gave my mom, I feel meant the most.  Many years we can’t remember what we even gave each other, which I guess has to deal with our obsession with materialistic things on Christmas, but this year I wanted to get something that they would remember.  So I had this frame made with my great grandmothers picture, surrounded by one of HER rosaries which my grandmother gave mom mother, aunts, and uncles.  Mom and the rest of the family loved it and I feel it’s a great way to honor such a great woman. Since I made my great grandmothers sugar cookies on a local TV show seen here, I figured I should not frame one of her famous sugar cookies so this was the next best thing!

Needless to say it was a great Christmas and loved all the family time and amazing food, as well as the time off work.  Even though we did not have snow ON Christmas, the day after Christmas we did get to wake up to this

Christmas Week

Hello! Hope everyone’s holidays are gearing up! My Christmas week got a very solid start.  I went back to my mom and dad’s house this weekend for my Dad’s side Christmas party with his family on Sunday.  It was so laid back, little kids opening presents, TONS of amazing food.  It really got us all in the mood for what I hope will be an amazing week leading up to Christmas.  However, the way my family celebrates Christmas is to cook, bake and eat.  So to keep with tradition that just what I did all weekend at home.

Two glorious desserts were on the menu for the Christmas party.  They both included two of my all time loves.  Chocolate Christmas candy, and Sugary kid Cereal.

The first dessert I tackled is a play of an all time classic Candy, which I only get to enjoy during the holidays.  I’m not sure if it’s a midwest thing or not but one of my families favorite Christmas desserts is the Buckeye.  Peanut Butter covered in chocolate?  You can not really go wrong with that combo.

However with my passion for the kitchen I wanted to put my own spin on this dessert and made these “Buckeye Bars” from Gooseberry Patch

 Buckeye Brownies, from Almost Homemade cookbook, submit by Heather Prentice

19-1/2 oz. pkg. brownie mix
2 c. powdered sugar
1/2 c. plus 6 T. butter, softened and divided
8-oz. jar creamy peanut butter
6-oz. pkg. semi-sweet chocolate chips
Prepare and bake brownie mix in a greased 13″x9″ baking pan according to package directions. Let cool. Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. Chill for one hour. Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool; cut into squares. Makes 2 to 3 dozen, depending on how big your sweet tooth is Winking smile 

They were VERY good and tasted like a buckeye for sure.  However, next time I may add a thinner layer of chocolate to the top.  With a fat layer of brownie on top, and thick layer of chocolate gnash on top made it awful rich. 

 

The second recipe I knocked out was a hit as well.  Let me preface by saying.  As a child I long for each morning to wake up and indulge in one three bowls of huge sugary cereal.

My favorite cereal to mow down in the morning was this stuff.  I think we went through two boxes a week….

Thus, what Christmas party is not complete with a snack mix and found this one from Betty Crocker.  However, it calls for Chex Mix and Coco Puffs.  While I love chocolate. Coco puffs do not make me jump up and down, and the Chex cereal, well its just a bit plain.  So.  I knew I had the rest of the ingredients cover but needed two cereals to replace the Coco puffs and Chex.  So when I saw the recipe that combined WHITE chocolate and cereal I knew we had a winner!

I ran to the store to the Cereal aisle to see what I have been missing in the world of sugary cereal lately.  I want to say….WHERE have I been.  I found these two amazing cereals yesterday!

Wow.  Cinnabon may be may new favorite snack.  While it may be loaded with sugar.  It really does give you a sense that you are eating a cinnamon roll! And the Reese’s Puff are also loaded with sugar but the Peanut Butter puffs are amazing.  How is it that no one turned me one to these!

Thus I pick up both new cereals and set out to finish my mix! Let me say.  The recipe does not call for ALL of the cereals, but between mom, dad, and I eating sampling the cereal, both boxes were gone by the end of this process.

Throw all your candy, cereal, pretzels, nuts, ect into a big bowl and melt your WHITE Chocolate

Add you melted butter and chocolate to the bowl and stir until coated

Then throw it all into a bag, add a 1/2 cup of powdered sugar and then lay out flat on a sheet trey to cool, and then just put it all back into the bag to bring to the party! Easy as that.  I will say I went threw and ate the M&M’s and Cinnabons first.  Both desserts were hits and fairly easy! Great way to start off the week of Christmas.

Holiday Party Mix

4 cups Cinnabon® cereal

2 cups Reese Puff® cereal

2 cups thin pretzel sticks (2 1/4 inch)

1 cup candy-coated candies (Plain M&M’s)

1 cup dry-roasted peanuts

10 oz white chocolate baking bars or squares, chopped

2 tablespoons butter or margarine

1/2 cup powdered sugar
  • 1 In large bowl, mix cereals, pretzels, plain candies and peanuts; set aside.
  • 2 In 1-quart microwavable bowl, microwave white chocolate and butter uncovered on High about 1 minute, stirring once, until melted and chocolate can be stirred smooth. Pour over cereal mixture, stirring until evenly coated.
  • In large resealable food-storage plastic bag, toss half of the cereal mixture with 1/4 cup of the powdered sugar until evenly coated. Spread on waxed paper to cool. Repeat with remaining cereal mixture and remaining 1/4 cup powdered sugar.
  • Lay flat on sheet pan to dry and cool
  • Store tightly covered at room temperature.

Christmas Ornaments

Christmas has many different meanings to all walks of life.  But as Linus reminds us the true meaning of Christmas.

Christmas holds a special place to me. It means being with family, friends, and great food.  But also means using some superficial items to help get my family in the holiday spirit!  Decorating the tree each year was a HUGE night for my family when I was younger and to this day putting up our tree still means alot.

Every year since my sister and I have been kids, we ALWAYS opened Christmas presents on Christmas morning.  However, my family would ALWAYS go to a Christmas Church Service on Christmas eve, come home, change, eat a ton of snacks, and then gorge ourselves with a huge feast. We would each get to open ONE or two gifts/stocking stuffers.

As we got older we realized this “stocking stuffer” would include the same thing each year….a Christmas ornament.  At the time, we were kinda bummed since we knew what it was going to be, and just laughed as we opened it.  It was still fun and got us stoked for what was coming in the morning, but as kids, an ornament was far from a desired gift.  It was not until the last few years when I moved out of my parents house and started decorating our own tree with the ornaments my parents handed down to me, helped me realize why my parents gave us an ornaments as gifts each year.  Going though my box, and placing each one on the tree honesty brought some great memoires and I can NOT thank my parents enough for giving the as gifts, and allowing me to have and keep to this day.

If you noticed, we decorated our tree, last week.  And these are just some of the ornaments we put on our tree that really got us into the Christmas mood!

And last, and the one that means most, is one in which my family had made from the rose petals off my Grandfathers coffin and grave site….So many great warm memories of sitting in the living room talking about sports and life.

These are just a few of the most memorable ornaments and I have MANY more.  Christmas is not about gifts and decorations, but it still is great to use some of them to get you in the spirit and really gives me so many warm memories of Christmas time as a child.

Its Beginning To Look a lot Like Christmas

Hope everyone is enjoying the start of the holiday season.  I know we we are.  What better way to kick things off by making our little apartment feel a little more homey?

I can’t take any credit for the layout of the decorations, that’s all Brittni, and I must say she does some nice work! But I my parents gave me MANY of my old ornaments I have collected over the years, and its always a great time putting up each one as they bring back some of my fondest memories.  (Ill have a post later with some individual ornaments and why they mean so much to me)

We slowly put everything together starting Monday and by Wednesday night we had it all done.

To cap it off I surprised Brittni with part of her Christmas gift….Dinner and a Concert over the weekend.  I made reservations at one of our favorite restaurants downtown at The Rathskeller.  It’s a classy, highend German restaurant, and pride themselves on top German beer and classic scratch made comfort German food.  They are know for their Pretzels with hot horseradish mustard they bring each table before each meal, and when I say “hot” I mean the spicy hot that burns so good, and you know its spicy, but go back in for seconds just to make sure the second bite was as hot as the first.  However, if you have never had top shelf German food, this is your place, and the Sauerkraut and Red Cabbage are soo on point.  After eating our way through Germany, and a few cocktails, we wandered across the street to the Murat Center to catch Straight No Chaser’s Christmas Show! For those of you whom don’t know.  The group a cappella men’s singing groups. The Indiana University (Go Hoosiers) group is composed of 10 to 12 undergraduate men whose lineup changes every year. The professional group, known simply as Straight No Chaser, is composed of former members, mostly original members, of the college group.

Going into the show, I was a little worried I wouldn’t like the show, but after hearing my sister and Brittni talk about them all the tie I took Britt and I was NOT disappointed.  The Christmas song were good, but the cover sooo many bands and artists such as Michael Jackson, Beach Boys, The Temptations, and so many more.  It was a blast and would highly recommend seeing them live!

They played for an hour, had in intermission, just long enough to grab another round of cocktails, and then sang for another hour, however they are really know for their song, 12 Days of Christmas!, and they  ended the show with singing that song.  (Its my sister favorite)

We had a blast and was a perfect way to get into the spirit.

The rest of the weekend was spent at the farmers market and I finished my Christmas shopping! Feels so good to have 99% of it done already!

But what better way to round out a perfect holiday weekend?  Yep.  Baking.

Chocolate Chip Cookies.  Milk and Mans best friend.  I under baked them on purpose to make sure they were pretty chewy, which made them a bit more flat, but still taste unbelievably good.

Chocolate Chip Cookies

Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.)
Directions

PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKEfor 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Next time Ill add some Peppermint Chocolate chips, along with some White Chocolate Chips to add a little more Christmassy feel.  But Britt was napping in the afternoon and wanted to surprise her with her favorite classic cookie and didn’t want to disappoint her, and disappointed she was not!

It was a great way to end a great weekend here in the big city, along with Indiana’s big win of Stetson.  Go Hoosiers!

Thanksgiving

Happy Thanksgiving! I hope each and everyone’s Thanksgiving was as blessed with amazing food, and even better friends and family as mine was!

I came back to mom and dads last Friday night (11/18) and kicked off the week of Thanksgiving, by heading up to the annual Trinity Fish Fry, at the local catholic church.  I met pops, a few good friends, and some cold drinks, where we played Blackjack, Poker, and had some good grub.  We then proceeded to end the evening with drinks at the PitStop.  It was a good way to start a week of vacation.

Saturday night was the annual Winter Fest in Portland, IN.  It kicks off by open houses of all the local businesses (ours included), lots of Christmas Decorations and music, and it ended with a Christmas Parade of Lights.  However, only in Portland Indiana can a classy, quaint parade goes from this:

Thanksgiving and the holidays in my family means two things.  Amazing amounts of food, and TWO separate Thanksgiving gatherings.  Two days of Thanksgiving?  Yes Please.

We got together for my moms side on the Sunday before Thanksgiving for Lunch.  If you missed the lunch/dinner/supper conversation I recommend reading it.  Anyway, we had a Thankgiving Lunch, which lead into supper.  With mounds of mindless eating all day.  It was great to see everyone, but the food was…..so killer

If you missed it, I had the honor of being on TV at the beginning of last week to make my Grandmothers, and moms famous Sugar cookies, to help them kick off their Holiday Memories cooking segments.  I have been on the show before, but this time was much more laid back and loved every minute of it.  The hosts Tracy and Andi are some of the warmest and nicest people I have met while living in Indy, and the lady I did the segment with is a hoot, and has one of the best personalities I have been around.  You can view my clip here, if you missed it.  (Thanks mother for your baking skills)

Turkey Day

Thanksgiving morning, pops and I got up and went hunting, and were big losers.  However, no disappointment on our part, because we had my dads family over for Thanksgiving at our house as well in the afternoon.  He is one of 10 kids in his family and its quite the production to get us all in the same place, but when we do its usually dominated by some of the finest down home cooking and mazing desserts, however on this day my food coma was highlighted by homemade Vanilla, Strawberry, and Maple Syrup Pecan icecream! I was in heaven, and had three bowls of each.  I ate the icecream so fast I did not even bother with pictures.

While missed being apart from the finance, I still had a really nice time back home, and can not thank my parents enough for letting me mooch off of them for a week.

The Meaning of Thanksgiving

I think Thanksgiving is my second favorite holiday hands down, behind Halloween.  There are no bunnies, fireworks, candy, or fat jolly men riding sleighs.  No.  Its about taking time to just enjoy what you are most thankful, and reflecting on all that we are blessed with.  Thus, I am thankful for:

26.2 Miles

Happy Friday guys!  And Happy Veterans Day.  I want to thank each and every one of you that have served our country and allowed us to have so many things we take for granted every day.

I wanted to use today to discuss my running recaps and why running means so much to me.
As you can also read in the About Me section, I  feel in love with running during my sophomore year of college, while attending Indiana University. (Go Hoosiers).  I began to jog a mile or two a day in order to drop a little weight, and soon I was up to 3 or 4 miles a day in a span of less than 6 months, and was feeling better than ever.  Running was also a bonus inorder to eat greasy food and drink pop beer, like a typical college kid.  During this time I also attempted to mix in weight training and lifting weights, however it just never ever appealed to me, as much as running.  It was addicting, and loved to have a habit that was GOOD for me.  The next spring I signed up for my first 5K, in Bloomington, IN.  It was the Habitat 5K, and helped support the local Habitat for Humanity,  which my sister Maria was very much a part of during her four years at IU as well.

Thus, after competing in my first race, the race bug caught hold, and wanted to run more, farther, faster, and and most of the race entry fees support a good cause!

So I continued to run father, more often, and added more 5K’s to my regimen. Since then I have participated many different types, lengths, and in many different locations, however, one of the most fun took place back in my hometown in Portland, IN, the Firecraker 5K, which kicks off all the festivities for the Forth of July.

Why I Run

The reasons behind my passion for running has evolved over the last few years.  As you can read here, I first ran to better my health, to lose weight and to feel better mentally and physically. After being a plump kid all my life, I loved how running helped me drop weight pretty quickly.  The more I ran, the more I loved it, and the the more weight I lost.  However, the fact that it helped me lose weight part so quickly become more and more important to me, and even though I ran more often, I began restricting my diet much more, and the weight then quickly fell off. On top of my job making me unhappy, depriving my body of the food it loved, and all the running, I began to become almost “sickly” skinny.

Thus, my eating habits DID not coincide with my running habits, but I ran more and farther to lose more and more weight.  Its weird, but if I would eat something I thought was “bad” for me, I would immediately wanted to go run it off. Running now had a new and 2nd meaning to me.  Now running was a tool to make myself feel better for eating certain foods.  Nevertheless, at the peak of my eating issues, I would run as much as normal but eat less and less, and I had just enough energy to run every morning and none left to do anything else I loved. My daily runs, were lethargic, took twice as long to go the same distance, and I really did not have the muscle or endurance strength to run like I used to.  It took everything I had to run, and the had no energy left to  to do the fun things I used to: going out to eat, visiting friends and family, even go for a walk with Britt after work.  All my energy was saved for my running.  I became pretty unsociable and shut myself off from many amazing people, whom I have reached back out to and apologized, and for those of you whom I have still yet to talk to, I am gravely sorry.

However, lets skip forward to the beginning of this year (2011), I started to get things back into perspective and back on the right path health wise.  With a new outlook on life, running again became FUN, and slowly but surely with proper food and eating regimen, I began to regain strength, endurance, and longer running distances.  Running now had a third and new meaning for me.  Running now is all for my mental health.  I start at 4:45am every morning, and it really helps me start my day.  It is so mentally and spiritually cleansing, but more importantly its “MY” time.  No phones, no internet, no bills, no problems to worry about.  Just me, the road, and time I have to clear my mind.  It really is like my caffeine in the mornings.  And when I do not get to run or when I take a day off from running, my day is soo slow and I function different than I do when I do run

Mini 500

As many of you know, we live in downtown Indianapolis, IN, which is also home to the countries largest half Marathon, the 500 Mini Marathon.  Seeing that the Start/Finish line is right out our back door, and little push from some good friends I decided to stretch out my runs and train for my first half Marathon (13.1 miles).  Leading up to the race, I ran close to 10 miles per run on the weekends and thought I would be prepared.  Food and fueling my body made me pretty nervous though, and wanted to eat enough inorder for my body to not break down mid race.  So with some amazing help/guidance of great friends I took some mental notes and asked others how they fueled their body’s before a long race. Looking back, the way I WAS eating 2 months before the race I would have never been able to finish the half marathon. I took the suggestions and attempted to fuel properly with a mix of carbs, proteins, and liquids.

The morning of the race I awoke at 6am, which is sleeping in for me, and ate an chopped apple covered in peanut butter, a piece of toast, and a banana.  Then headed out the door! We lined up, and I really didn’t know what to expect, except I knew I wanted to RUN the whole thing without quitting ro walking.  The race started, and I was near the middle of the pack, and quickly ran upon SO many runners slower than me, and it made it a bit of a hassle running around the slower participants.  And near the middle of the race, it almost became frustrating zig zagging back and forth.  However, my anger quickly turned to excitement, as I forgot to look at the course map, and they were soon directing us on the Indianapolis Race Track! We ran on the same track as the Indy 500 cars race, and where so many spine chilling races have occurred.  It was my first time inside the speedway and I really got caught up in the surroundings, the ambiances, and the history of the “Greatest Spectacle in Motorsports”.  They let us run a WHOLE lap around the track, however, when I say lap, a lap around the track is 2.6 miles.  It was an amazing experience and really took your mind off the distance you were running.  However, after we left the track, I was coming up to mile 8 of 13.   We’ll just say mile 9, was my Achilles heel.  Nothing physical was wrong, and I felt great, but there is something about running your first LONG race, that you begin to have a fight with your own mind.  You mind says, whoa whoa, that’s enough, but you legs keep running.  And by mile 10, you have to keep your legs moving, because at that point my mind quit  and knew I had to fight to get to the finish line.  However, when I saw the maker for mile 11, and I knew the rest would be pretty easy.  I remembered there was a free BEER at the end for us, and kept reminding myself I would get a free beer, and bottle of chocolate milk.  Laugh all you want, but until you run those distances, you take ANY kind of inspiration to keep you going.

Well, there ya have it, I finished.  Tired, cold, and…tired.  I did it.  It was a great experience, but said several times, what the Hell did I do that for?  I told myself NEVER ever again will I run that far for fun.  Like I said, running to me is FUN, and when I was done, that felt that was the opposite of fun.  But running that far did come with a perk, the next 12 hours was spent eating, and eating…..everything! I ate like I hadn’t eaten in days, and loved every minute of it, and never thought twice about one thing I ate.  Thus, the next morning was a little rough and felt a little weak so I took a break from running and got back to it Monday morning.  The one thing I took away form the race was that I needed to eat even MORE than I did before the race.  I ate right, but apparently not enough.  So after sleeping on it a few weeks, something inside got me thinking about running a race again, then someone sent me an invite to another marathon. I thought, no way..never again.  But the email and invite resonated with me, and thought, “Why not?”  So I signed up for another half marathon.

So there it was, June 8th, 2011 I got the email from the Marathon committee telling me to come pick up my packet for the race on Saturday.  I knew I could delete the email and back out, or move full speed ahead and start preparing myself both mentally, and physically.  I took what I learned from the first marathon, along with a few more tips from my running buddies and took it with a full head of steam, even getting excited about this one.  I ate better, psyched myself up more, and was much more prepared.

The race gun sounded, and we were off, however, unlike the 500 Mini, this race was up in the town Carmel, IN.  A smaller, quaint, classy, and a bit more relaxed racing than the downtown.  The course ran mostly in wooded areas, and sub division’s, which made for a more clam, peaceful run.  I loved every minute of it, until…mile 9.  The same mile that almost made me quit the first race.  Again, it was not physical, it was mental.  Hitting the proverbial “running wall” at the same mile which hurt me last race, can be pretty crushing to your will power.  Not to mention it was close to 25 degrees warmer than the first marathon, made it even tougher.   I sweat, and lost more liquid than I did during the spring Mini 500.  But I pushed though mile 9 and 10, and kept telling myself I would get a big buffet for supper that night, inorder to help me finish stong.  Well, my mantra of eating a buffet helped, but still the remaining 3 miles were tougher than the end of the first race…..but…

I ran hard and finished, but honestly had so much more fun during this race.  I feel that due to the higher temperatures, which were close to 75 degrees vs the 40’s I ran in during the Mini, made the race a little tougher.  However, I was much more proud of what I just accomplished and being a bit more relaxed helped me to enjoy the race.

26.2 miles

I ran a few more 5k’s and 10K’s throughout the summer and on October 15th, 2011 I ran my first FULL marathon. Honesty, running a marathon never crossed my mind.  However, A few friends asked if I was joining up to run the Monumental Downtown Indianapolis Marathon which was last week (Nov.2nd, 2011).    At the time I said no way, because I figured it would be below 40 degrees outside, and when the temperatures drop below 40, I become a wimp and I stay inside on a treadmill. It’s not so much I’m a pansy, but as a runner, when/if you do run outside when its cold, my body goes into extreme survival mode and pulls all the blood from my fingers and toes and moves itcloser to your core and heart, thus, I said thanks but no thanks. I blame my mother for being so so cold blooded, it could be 70 degrees in the middle of the summer and she still uses a blanket at night while she watches TV.  (Love you mother)  However, Brittni’s oldest brother Derrick just ran his first FULL, at the Chicago Marathon, (big ups to him), but his feat really had me stoked to try one myself. Thus, it did get me thinking about running a FULL marathon and I remembered seeing that there was one here in Indy coming up in the middle of October, but forgot about the race completely until I was driving by where the location of the Indianapolis Marathon was being held, and stopped in and said I’d love to get one more HALF marathon in this year.  As I was signing up, I had a change of heart…..I decided I was running the FULL, and not giving myself the time to rethink it!!! So I signed up and headed home to prepare my mind and body like any other race I ran in.

Why I choose to run a Full Marathon

With this being my first FULL Marathon, I didn’t tell a SOUL, I now feel bad for not even letting Britt know but I had a few reasons for this decision:

1) I wanted to do it for me, first and foremost.  To prove to myself I was back on the right track, health wise.  And to also show myself I had the will and spirit to do things much bigger than a running a race.

2) I wanted to do it for those who are unable because of a physical limitations.

3) I wanted to do it for those runners whom strive to run a Marathon and are still working their way up to that distance.

4) And lastly, I wanted to do it for those whom sit on the couch, out of shape, but long to be healthy and happy. I hoped my story would be an inspiration for them to get off the couch and make the choice to begin to exercise and change their life forever.

Very few people in the world can say they have even attempted to walk 26.2 miles, let alone run a full Marathon and really wanted to prove to myself I could do something of that magnitude.  The days leading up to it were like any other race.  However, as I stepped outside to drive to the race I noticed the wind and the cold…my two enemies.  So I grabbed my hat, gloves, and a pull over and headed out! This race vibe was also a little more laid back, but once we lined up, the anticipation increased and bang, the gun went off.  Now, I knew if I was going to finish the whole thing RUNNING, I would have to really not runn too quickly the first few miles, so I eased my pace and did not try and pass people.  The course was gorgeous, it ran through the Fort Harrison State Park in Lawrence, Indiana which was very relaxing and calming, and lent to make the race easier.

Thus, I was feeling pretty good and moved right along until MILE 8! Again I got to mile 8/9 and hit a wall, but said, “you have A LOT more to run, and too many people I would let down if I don’t push though”, and push on I did! That was until mile 12.5.  Again I didn’t check the course map, and had no idea at mile 12.5 the course split and if you wanted to just run the HALF marathon you could turn left, and if you wanted to run a DULL you could go straight and head even deeper into the state park.  Wow, what a choice, I could quit now, knowing I’d be proud of running another half marathon, but knew I would be even more proud if I ran the FULL.  So I laughed at the sign and kept running.  Again, it was a pretty relaxing course and once we passed the “split” where the smart ones half marathoners left the course, the runner began to get spread out and I never once had to deal with passing another runner.  By mile 16, I was wondering and wishing for the choice to turn left and only run the half half Winking smile  But luckily I was told I may need a little sustenance and bought some GU Gel packets I stached in my pocket for an emergency boost of energy.

I was told to buy the plain and vanilla versions, and at mile 16 I ate one of the Vanilla.  I have NEVER tired using these during a race, and for those of you whom never tasted them:  they are very sweet, full of sugar, and need a chaser to help you swallow them.  So I sucked it down around one of the water stations and waited to see happened.  They did they job and helped for the next few miles.  Until about mile 19.  When I hit a wall again, and this was a BRICK wall.  I had one more GU packet left and suck it down, praying it would help push me to the finish.  However, I’m not sure if it was the GU or seeing the mile 20 sign.  I believe it was seeing the mile 20 sign that REALLY helped push me to the finish.  When you know you only have 6 more miles left, you start getting pretty emotional and think about what you are about to accomplish. Thus, your adrenalin again begins to pump and I ran the last 6 miles as strong as I ran the first 6.

The race was a once in a life time experience and something that I will take with me forever and where-ever I go.  No one can take it away from me.  The key take away for me was realizing what your body can really do if you push it hard enough. You have NO idea your will power, mental strength, and perseverance until you run 26.2 miles.  And for those reasons, I pray that each and everyone of you get the chance to participate in a Marathon once in your life.

Again I can not and will not thank those who showed me love and support leading up to  and after the race. With out your kind words and encouragement on my road back down the right path health wise, I would have never thought about running a Marathon.  A special thank to Brittni, for allowing the alarm clocks to go off at 4:45AM , never giving up on me, and for caring every day.  thanks to my parents and sister for their tough love and kind words, and pushing me to really rethink what I was doing to my body 8 months ago, and lastly Derrick Ristich, Dianna Fox, and Lori Bantz for giving me some solid tips and support during all my races this year.  For those whom I did not mention and should have, speak up so I can give credit where credit is due.

Finally,  for all those who have helped along this long journey, I cursed thought of all of you while I 26.2 miles and can not thank you enough, and I heard each one of your voices pushing me to the end.
